Eclair Secrets (at the Ewa Feix Akademie)

If your passion is baking then you will love to learn one of France’s most delicate desserts. Pâte à choux also known as Brandteig in Germany is one of the most famous French pastry doughs and is used for making profiteroles and eclairs.

Under the tuition of Ewa Feix you will master the art of baking Éclairs (which means “flash of lightning” in French). In this course you will learn:

-how to prepare a classic choux pastry base

-how to create a chocolate choux pastry base

-how to create pastry cream

-how to create Crémeux

-how to prepare the classic shiny glaze 

-how to create crunchy decorative eclair toppings such as Almond Crunch and Chocolate Streusel Crunch

Each participant gets a box full of freshly made eclairs to take home to friends and family.

So please bring an apron, a notebook and pen and you are welcome to take pictures throughout the class. No video is allowed.

Cold and warms drinks are included. As well as small finger food like pizza and fruits. Also included in the workshop fee are all materials, ingredients and tools.

One week before the course, all participants will receive an email with driving directions and more information about getting to the course.

All courses take place in the German language. Addition clarifications can be made for English speakers.
